Do we both have to exchange wedding rings? How do we handle just one wedding ring exchange during the ceremony?

You do not have to exchange wedding rings, it is not a requirement, it is your choice, your option. In regards to only one person wishing to receive a ring during the ceremony, this detail should be brought to the attention of your officiant (at a pre-wedding meeting) so he or she can make the appropriate adjustment in the ceremony wording.
