Question from a Bride and Groom . .

I just ordered a small round wedding cake for cutting and photographs but I really don't like cake.  My Mother is a great pie baker; and since we are having a "desserts only" reception after our sunset wedding she suggested adding a couple of pies to the dessert table.  Got any ideas for pies for a July wedding?

You certainly can't go wrong serving these two pies, Blueberry Cream Pie and Peach-Raspberry Pie, which are very eye appealing and a great way to use three summer fruits.

What is letterpress printing? . .

Response . .
Letterpress printing involves locking movable type into the bed of a press, inking it, and rolling or pressing paper against it to form an impression.  High quality papers and inks are used.  Items printed on a letter press can be easily identified by the impressions of the letters which punch into the paper slightly and create a raised effect.  Letterpress printing is labor intensive but it is also considered "a work of art."

Questions from a Bride and Groom . .

We both love Chex Mix, and we serve it at all of our parties.  Since this is our "signature snack" would it be okay to serve a couple of different kinds of Chex Mix with drinks during the social hour and then pass out small bags of Chex Mix as take-home gifts as our wedding guests depart.

It's a great idea!  May I suggest Herbed Cashew Snack Mix and Party Hardy Chex Mix during the social hour (and they should be labelled or marked because the first mix has nuts in it).  Put the mixes in brightly colored bowls, the bright colors will grab your guests' attention immediately.

May I suggest wedding theme cellophane bags or take-out boxes of Chex Apple Cinnamon Pecan Snack Mix and Chocolate-Peanut Butter Munchies as the departure gift(s).  And may I also suggest creating labels for the take-home bags or boxes either saying "Thank You" or the ingredients of the mix (or both).

Filipino Wedding Customs and Traditions

Pre-wedding tradition:  A diamond or birthstone ring can be given as an engagement ring.  Wedding plans are often made during the pamanhikan, which is when the groom formally asks permission to marry the bride.  The Despedida de Soltera is a kind of farewell for the bride, hosted by her family, and the groom's family is invited.

Wedding attire and jewelry:  Tailor-made gowns and tuxedos are now common, but the tradition barong tagalog, a thin, embroidered ecru shirt, is still popular for grooms and male wedding guests.

Ceremony:  Godparents, called ninongs and ninangs, stand as witnesses.  The ring bearer is accompanied by a coin bearer, who carries 13 coins, called arrhae, symbolic of wealth.  The bride's long veil is pinned to the groom to symbolize their union and a loop, such as a rope or a string of flowers or coins, is placed around the couple to signify their bond.

Reception and food:  An elaborate feast follows the wedding with numerous courses.  There is often a money-dance, in which male guests pin money to the bride's gown.  White doves, kept in a bell-shaped cage, may be released after the ceremony.

Question from a Bride and Groom . .

My future Mother-in-law is going to host a lunch on her sun porch after our 11AM wedding rehearsal.  Could you suggest two "make ahead" items.  One has to be a meatless recipe.

Response . .

Savory French Toast . . sliced Italian bread, chopped tomatoes, black olives, olive oil, eggs, feta cheese,  salt and pepper.

Shepherd's pie topped baked potatoes . . the potatoes can be baked ahead of time or microwaved in less than ten minutes.  Prepare a shepherd's pie filling of sauteed ground beef, peas and carrots (this can be made ahead and kept warm in a slow cooker).  Put a spoon full of sour cream on top of the Shepherd's pie mixture.

Serve with iced tea, lemonade or ice water. 

Dessert can be an assortment of brownies or homemade cookies.

We cannot afford to pay $49.95 per person for a three course dinner at our reception.  Do you have suggestions on how to reduce this cost?

Response . . Get married in the morning.  The least expensive FULL MEAL that you can serve your guests is breakfast or brunch.  Go to your hometown dinner, look at the menu.  Waffles, pancakes and scrambled eggs cost a lot less than burgers or steak.  And here's the best part about having a morning reception . . the only alcoholic beverage that you have to purchase is a glass of champagne for each guest for the toast to the Bride and Groom.  People do not expect an open bar or a disc jockey or an elaborate wedding cake at 11AM in the morning.

Omelet, fresh fruit, toast, and a cup of coffee.

The bridal shower might be modeled after a tradition called an Epp, or the "loading of the bride," when elders in a village offer advice and gifts to the bride-to-be.  Grooms-to-be may follow the tradition of bringing family gifts to their prospective bride's home.

Wedding attire and jewelry:  African headdresses may replace the traditional veil in contemporary weddings.  Elaborate braided hairstyles can serve as their own headpiece.  The groom may drape an African-patterned scarf over his tuxedo.  The couple may also create their own wedding attire using African-patterned material and styles.

Ceremony:  The broom, used by some Africans to sweep away evil, appears in some African-American weddings.  The bride and groom jump over it just as slaves did to show their entrance into marriage.  African kente cloth is often used as an aisle runner.  In West African culture, a libation is poured just before the feast.  At the end of the ceremony, corn can be thrown instead of rice.

Reception and food:  Popular dishes are Southern, Caribbean, Creole and African dishes . . including orange-glazed sweet potatoes, peach cobbler, biscuits, seafood gumbo, Jamaican beef patties, fried plantain, beef kabobs, and black cake.
